The hospitality industry involving restaurants, are the major contributors of global warming, gas emissions and generation of waste and it will result in severe consequences to our environment if this industry keeps on running like this. It is the need of hour to bring certain changes in the operations of these restaurants in order to protect the environment and reduce the emission of harmful gases.
As I have been working in a prestigious restaurant for six months, I have seen ample of practices which lead to wastage of food and energy as well as emission of gases and generation of carbon footprints. In order to put an end to these practices or application of new sustainable practices, Kotter’s change model can be implemented in our restaurant. Firstly, a sense of urgency needs to be created by making the top-management see made aware of the need of implementing change and how these practices are badly impacting our environment. For instance, there are 16 TVs in our restaurant which are kept turned on whole day just to display the logo of the restaurant which waste a great deal of electricity whole day. Moreover, with every Spyce delivery, a lot of single use plastic cutlery is sent out which may or may not be used by customers and generate a huge non-renewable and non-recyclable waste. Secondly, a clear strategic vision should be created and initiatives would be taken to take alternative actions to minimize the wastage. Thirdly, the vision to create a better world by eliminating climate emissions should be properly communicated in the entire organisation so that changes could be made at the very core of the problem generating areas.
In addition to this, people in our society should be made aware about increasing climate emissions and its harmful impacts and they should be told about the things they could do on their own to preserve the environment. Canadian Government’s suggestions (Things you can do to help the environment – Canada.ca) should be communicated with people so that they can bring a change on their part. These small changes could make a huge difference and help the environment to heal.
